19, 20, 21, 2011 ALL FOOD VENDORS The following requirements are from the N. H. Department of Safety Office of the State Fire Marshall. 1. A Type K fire extinguisher is required in all cooking areas. 2. All commercial cooking operations will be installed and operated and maintained in accordance with the N. H. State Fire Code and NFPA96. 3. Cooking equipment used in trucks, buses, trailers, pavilions, tents or any form of roofed enclosure shall comply with NFPA96. 4. All tents and membrane structures shall meet NFPA701 standards. 5. LPG containers shall be secured and located no closer than 60" to a tent or membrane structure. 6. All vendors producing grease laden vapors will be required to have hood venting systems and fire suppression systems. Grease laden vapors come from grills as well as from deep fryers. All units must be UL approved. 7. All hoses used for potable water must be listed NSF61 for potable use; example RV grade (white) hose. 8. All LP gas installations shall meet NFPA54 and NFPA58. These requirements are for all carnivals, festivals and fairs in the state of New Hampshire.
